Farm Fresh Baked Potatoes

A classic baked potato recipe with some farm fresh topping inspiration! This meal can be made fresh or the potatoes and toppings can be prepared a day or two in advance for quick weeknight dinners.
Ingredients
4 large baking potatoes, like russets
1 teaspoon olive oil
Kosher salt
4 tbsp unsalted butter
Instructions
Preheat oven to 450.
Scrub potatoes under running water; dry them, and rub the skin of each with the oil and a little salt. Pierce the skin of each in three or four places with the tines of a fork.
Place the potatoes in the oven, and roast for 45 minutes to an hour, depending on the size of the potatoes, until they offer no resistance when a knife is inserted in their centers.
Remove the potatoes from the oven, slice them open down the middle, apply a tablespoon of butter to each one and serve immediately.
Topping Ideas
Fats & creams Butter (salted, compound, or herb), crème fraîche, cream cheese, Greek yogurt (a lighter sour cream swap), or a drizzle of olive oil.
Cheese Cheddar, Gruyère, pepper jack, blue cheese crumbles, gouda, fontina, or fresh goat cheese. Melted vs. room temperature makes a big textural difference.
Proteins Baked beans, crumbled tempeh, soft-poached egg, pulled pork, leftover chili (a game-changer), shredded rotisserie chicken, smoked salmon, canned tuna, crispy pancetta, or ground beef.
Vegetables
Fresh - microgreens, tomatoes and salsa
Caramelized - onions or shallots
Sautéed - mushrooms, kale, mustard mix, spinach, or arugula, and broccoli florets
Roasted - garlic, peppers, and corn
Pickled jalapeños, kimchi, sauerkraut
Sauces & drizzles Ranch dressing, blue cheese dressing, hot sauce (Frank's, Cholula, etc.), BBQ sauce, pesto, tahini, aoli or mayonnaise.
Herbs & finishing touches Green onions, dill, parsley, cilantro, sage, rosemary, oregano, smoked paprika, black pepper, and/or a pinch of flaky sea salt over everything.
The holy trinity (classics) Sour cream, shredded cheddar, and crispy bacon bits are the foundation most people build from. Add chives or green onions and you've got the quintessential loaded potato.
