Fairy Salad

This recipe is the perfect antidote for those in need of a little more whimsy in their lives. Delight your inner child or your actual child and marvel in the magic and beauty all around us; sometimes the quickest way to joy is through your eyes first, and then your tummy!

Ingredients

  • .25# or 5cups of Lettuce mix or chopped Lettuce

  • 2 cups Arugula or other greens like Purslane or Cranberry Hibiscus

  • 1 cup chopped Fennel fronds - or a mix if thinly sliced Fennel bulbs and fronds

  • 1 cup berries - Gooseberry, Currents, raspberries, strawberries, blueberries, grapes, etc

  • ½ cup Radish, thinly sliced

  • ½ cup Salad Turnips, thinly sliced

  • ½ cup or 16oz of Edible Flowers like - elderflower, cornflowers, purple mallow, nasturtium, borage, etc

  • Dressing: Top with your favorite vinaigrette - raspberry, elderberry, citrus and balsamic all go well.

Instructions

  1. Collect, wash and chop all your produce

  2. Layer greens, root veggie slices, and berries in a bowl or on individual plates - Optional to mix dressing in now or dazzle on after.

  3. Top with flowers and more berries

  4. Serve and enjoy!

Notes

  • Switch out the fruit, flowers veggies and greens based on the season.
