Blueberry Mint & Cucumber Salad

Summer finest fresh flavors combine in one bowl. Fresh blueberries paired with cucumber and mint from the garden and accented with feta to make a knock-out side to add to any cookout or light lunch.
Ingredients
Ingredients
2 Tbsp. olive oil
2 Tbsp. white wine vinegar
2 cups blueberries
2 cucumbers, sliced
2-3 scallions, thinly sliced
½ cup crumbled feta or marinated tofu
2 cups lettuce, chopped
1 cups lightly packed mint leaves
Salt to taste
Optional* add ¼ cup hemp and or pumpkin seeds
Instructions
Toss all ingredients together and serve immediately.
Notes
Switch out the fruit, flowers veggies and greens based on the season.
