Blueberry Mint & Cucumber Salad

Summer finest fresh flavors combine in one bowl. Fresh blueberries paired with cucumber and mint from the garden and accented with feta to make a knock-out side to add to any cookout or light lunch.

Ingredients

  • 2 Tbsp. olive oil

  • 2 Tbsp. white wine vinegar

  • 2 cups blueberries

  • 2 cucumbers, sliced

  • 2-3 scallions, thinly sliced

  • ½ cup crumbled feta or marinated tofu

  • 2 cups lettuce, chopped

  • 1 cups lightly packed mint leaves

  • Salt to taste

  • Optional* add ¼ cup hemp and or pumpkin seeds

Instructions

  1. Toss all ingredients together and serve immediately.

Notes

  • Switch out the fruit, flowers veggies and greens based on the season.
