Tarragon Aioli

The beauty of herb infused aioli, is that it is so strong and powerful that a little goes a long way.

Ingredients

  • 3 cloves garlic, sliced

  • 1 pinch kosher salt

  • 1-2 tablespoon chopped fresh tarragon

  • ½ cup mayonnaise (home made mayonnaise recipe here+ vegan mayonnaiserecipe here)

  • 2 teaspoons fresh lemon juice

  • 1 pinch cayenne pepper, or to taste

Instructions

  1. Crush garlic and salt together in a mortar with a pestle or small food processor; add tarragon and continue crushing with the pestle until tarragon is pulverized.

  2. Stir mayonnaise and lemon juice into garlic-tarragon mixture until aioli is smooth; season with cayenne pepper.

Notes

  • Best if made ahead of time. Store in the fridge for at minimum 2 hours - ideally overnight.

  • Serve as a dip or sandwich spread. Its perfect with potatoes, poultry, seafood, grilled veggies.
