Refreshingly simple. Incredibly healthy. Totally delicious. Parsley-mint salad as a side to all your heavy meals.
Ingredients
2 bunches of fresh, flat-leaf or curly parsley, chopped
1 bunch of fresh mint, chopped
1 lemon, juiced (about 1 Tablespoon juice)
3 Tablespoons extra virgin olive oil
sea salt and pepper to taste
Instructions
Combine all of your salad ingredients into a mixing bowl and toss
Optional addtions: Pumpkin Seeds, slices of Preserved Lemons, Peas, or diced Cucumbers
Serve fresh or refrigerate for up to 3 days.
