Refreshingly simple. Incredibly healthy. Totally delicious. Parsley-mint salad as a side to all your heavy meals.

Ingredients

  • 2 bunches of fresh, flat-leaf or curly parsley, chopped

  • 1 bunch of fresh mint, chopped

  • 1 lemon, juiced (about 1 Tablespoon juice)

  • 3 Tablespoons extra virgin olive oil

  • sea salt and pepper to taste

Instructions

  • Combine all of your salad ingredients into a mixing bowl and toss

  • Optional addtions: Pumpkin Seeds, slices of Preserved Lemons, Peas, or diced Cucumbers

  • Serve fresh or refrigerate for up to 3 days.
